When will AI be able to help us create a document and then iterate, add and improve as you go on the fly?

This is what I really want. Sure I can ask gpt to write something but it's not great at editing or changing. I'd love to be able to have a conversation with it like I would if I was sitting beside a writer. Is there anything like this yet or might it be coming soon?
